Ingredients for Vanjaram Meen Kuzhumbu
 1 kg Seer fish
 1 tsp Turmeric powder
 4 tsp Cooking oil
 3 tbsp Gingelly oil
 Salt, as required
 1 tbsp Homemade kuzhambu masala
 ½ tbsp Fennel powder
 1 tsp Coriander powder
 1 tsp Kashmir chilli powder
 2 tbsp Tamarind sauce
 200 g Small onion/ shallot
 3 qts Medium size tomato
 3 qts Coconut
 ½ tsp Fenugreek seed
 1 qt Green chili
 5 qts Garlic
 Curry leaf, as required

Method of preparation of Vanjaram Meen Kuzhumbu

Take boneless seer fish to make Vanjaram Meen Kuzhumbu, so that kids will eat it consume it easily. I used to marinate the fish in masala before making Vanjaram Meen Kuzhumbu. For this, add turmeric powder, 1tsp oil, 1tsp of homemade kuzhambu masala, and 2 tsp water to seer fish and mix well. Marinate it for 10 minutes.

Now let us prepare the other masala required to prepare Vanjaram Meen Kuzhumbu. Heat a pan, add 2 tsp of oil, add small onions, tomatoes, and sauté it.

Now add coconut pieces and sauté it for 5 minutes. Once it is ready, allow it to cool and grind into paste.

Take a pan; add the grinded paste, homemade kozhambu masala, Kashmir chilli powder, fennel powder (to avoid stink of fish), and tamarind sauce. Mix them well with required amount of salt and water. At this stage itself you can add more masala to make Vanjaram Meen Kuzhumbu as spicy as you need.

Now heat another pan and add gingelly oil. Gingelly oil makes Vanjaram Meen Kuzhumbu more delicious. I always use gingelly oil for fish curry and other puzhi kuzhambu to make them tastier.

Now season it with fenugreek, garlic (do not chop it as it would change the flavor of fish curry), 5 chopped small onions, green chilli and curry leaves. Sauté until onion turns brown.

Now add the mixture we prepared earlier to it. Close it with a lid and cook for 7 minutes.

Now add the marinated fish to the curry. Don’t close it after adding fish.

Allow it to cook for 7 more minutes.

Once the oil separates out, turn off the stove.
