One of such fabulous dishes that rules several men and their cravings is the hotel prepared parotta. This yummy dish survived several decades since world war II. But in our towns, this renowned dish is not familiar alone, but is paired with a side dish called Salna (Plain Salna, Hotel Salna, Empty Salna, Parotta Salna).

 3 tsp Peanut Oil
 2 qts Onion (large), chopped
 2 qts Country Tomato (large), chopped
 2 qts Green Chilli
 ½ cup Coconut (sliced)
 ½ cup Mint & coriander leaves
 1 tsp Ginger garlic paste
 1 tsp Turmeric powder
 2 tsp Kashmiri red chilli powder
 1 tsp Chicken Masala
 ½ tsp Garam Masala
 10 qts Cashew Nut
 1 tsp Poppy Seeds
 1 tsp Cumin Seeds
 1 tsp Fried gram
 2 qts Cinnamon
 2 qts Clove
 2 qts Cardamom
 1 qt Star Anise
 1 pinch Kalpasi (Black Stone Flower),
 Salt, as needed
Method of preparation:

Prepare the necessary ingredients to go for the recipe, Hotel Style Plain Salna / Hotel Style Empty Salna.


Heat the peanut oil in a pan; add anise star, cinnamon, clove, cardamom, kalpasi (Black Stone Flower) to the oil, when it’s hot. Kalpasi adds flavour to Hotel Style Plain Salna / Hotel Style Empty Salna.


To the deeply fried ingredients add chopped onion; let it cook for a while.


Meanwhile, prepare a fine paste with sliced coconut, cashew, fried gram, poppy seed and cumin seeds.


To the mixture in the pan add green chilli, mint, and coriander leaves. Mint adds flavour to the recipe.


To the mixture add ginger garlic paste, turmeric powder, Kashmiri red chilli powder, chicken masala and garam masala and let it cook.


Add chopped tomato to the mixture. Even tomato sauce can be used, and there is no need to let the added tomato cook deep.


Add salt for taste, fine coconut paste, and little water; let it cook for few minutes.


When the mixture attains the gravy texture, top up coriander leaves and finalize the Hotel Style Plain Salna recipe. Now the Hotel Style Plain Salna / Hotel Style Empty Salna is ready to be served with yummy Parotta, Chappati and Dosa.
